Ingredients

• ½ cup Pitted green olives
• 4 Ripe tomatoes
• 1 Green pepper
• 1 clove Peeled garlic
• 1 Medium cucumber
• 4 tbsp Red wine vinegar
• 1 glass Cold water
• ¼ cup Bread
• Extra virgin olive oil to taste
• Sea salt to taste
• Fresh herbs to taste

Instructions

• Wash all vegetables well. Remove the stems and seeds.
• Cut all the vegetables and bread into medium pieces.
• Place in a blender with the rest of the ingredients, except the bread. Blend for 5 minutes at full speed.
• Let the mixture cool in the refrigerator for 2 hours before serving.
• Ladle into serving bowls and garnish with plenty fresh herbs and a drizzle of olive oil. Bread to serve.
